Executive Chef Thomas Hartwell
Thomas worked in a few restaurants before graduating high school and moving to Santa Rosa California, where he found the team at Restaurant Matisse, a French inspired new California cuisine restaurant under the guidance of Chef Michael Hirschberg enabling him to enter his apprenticeship at the Westin St. Francis in San Francisco. After returning to the States he entered the Hotel world with a three year run the Westin at the Copley Place in Boston where he also worked at the historic Boston Park Plaza hotel under Roland Z.
Thomas went on to the Historic Mayflower Hotel in Washington DC where he served as the Executive Sous Chef under Chef Norman Wade. He then went on to open two more hotels and work in different capacities all over the world for Stouffer Hotel Renaissance and the Ritz Carlton Hotel group. During this time Thomas served as team captain for the culinary Olympic teams won two gold medals and the team scored the highest scoring team award. He was named chef of the year for the US Virgin islands. After moving to the US Virgin Islands, he then opened his first restaurant called the Old Stone Farm House.
Thomas decided Wine Country was the place for him. He started as the Chef de Cuisine at the Meritage Hotel and Resort. He then found his way to the family at Zuzu in downtown Napa where he served for four years traveled to Spain twice with the crew and had a great time serving the dining needs of Napa.
Thomas took over as the Executive Chef at Hilton Santa Fe Buffalo Thunder in 2014. Combining Southwest flavors with a modern twist Thomas utilizes local produce from Tewa Farms to create savory dishes you're sure to enjoy.
